Mediterranean Chickpea Salad Recipe

Ingredients
  

  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 large cucumber diced
  • 1 red bell pepper diced
  • 2 cups cherry tomatoes halved
  • ¼ cup red onion diced
  • 4 ounces feta cheese crumbled
  • ¼ cup finely chopped parsley
  • Lemon vinaigrette as desired

Instructions
 

  • Drain and rinse the chickpeas thoroughly, then pat dry if desired.
  • Dice the cucumber, red bell pepper, and red onion.
  • Halve the cherry tomatoes and finely chop the parsley.
  • Add the chickpeas, cucumber, bell pepper, tomatoes, onion, feta cheese, and parsley to a large mixing bowl.
  • Pour the lemon vinaigrette over the Mediterranean Chickpea Salad.
  • Gently toss everything together until evenly coated.
  • Serve immediately or chill for 30 minutes for even better flavor.

Notes

  • You can swap feta cheese for goat cheese if preferred.
  • Fresh mint or basil also works beautifully in this salad.
  • Serve with pita bread, grilled vegetables, or soup.
  • This Mediterranean Chickpea Salad tastes even better the next day.
