Ingredients
  

  • 3 tablespoons extra-virgin olive oil divided
  • 4 boneless skinless chicken breasts
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 2 garlic cloves finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon crushed red pepper flakes
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup finely chopped sun-dried tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup finely grated Parmesan cheese
  • Torn fresh basil for serving

Instructions
 

Step 1

  • Preheat the oven to 375°F. Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat.

  • Season the chicken breasts generously with salt and black pepper. Cook the chicken for about 5 minutes per side until golden brown. Transfer the chicken to a plate.

  • In the same skillet, heat the remaining olive oil over medium heat. Add garlic, thyme, and crushed red pepper flakes. Cook for about 1 minute until fragrant.

  • Stir in chicken broth, sun-dried tomatoes, heavy cream, and Parmesan cheese. Season lightly with salt and bring the sauce to a gentle simmer.
