Ingredients
  

  • 650 g skinless boneless chicken breasts
  • 50 g all-purpose flour
  • 1 tablespoon olive oil
  • 3 garlic cloves crushed
  • 150 g sun-dried tomatoes drained
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • 150 ml double cream heavy cream
  • 200 ml chicken stock
  • 50 g grated Parmesan cheese
  • 15 g fresh basil leaves
  • Juice of ½ lemon
  • Sea salt and freshly ground black pepper to taste

Instructions
 

  • Pat the chicken breasts dry with paper towels and season lightly with salt and black pepper if desired.
  • Coat each chicken breast evenly with the flour, shaking off any excess.
  • Heat the olive oil in a large deep skillet over medium heat.
  • Add the chicken breasts and cook for about 5 minutes on the first side until golden brown.
  • Flip the chicken and cook for another 5 minutes.
  • Transfer the chicken to a clean plate and reduce the heat to low.
  • Add the crushed garlic, sun-dried tomatoes, oregano, and paprika to the skillet.
  • Cook for 3–5 minutes while stirring until the garlic becomes fragrant and softened.
  • Pour in the chicken stock followed by the heavy cream.
  • Stir in the grated Parmesan cheese until completely melted and the sauce becomes smooth.
  • Return the chicken to the skillet, nestling it into the creamy sauce.
  • Cover with a lid and cook for 5 minutes.
  • Turn the chicken over and continue cooking for another 5 minutes or until fully cooked and the internal temperature reaches 165°F (74°C).
  • Remove from the heat and stir in the fresh basil and lemon juice.
  • Serve your Marry Me Chicken immediately over pasta, mashed potatoes, rice, or with warm crusty bread to soak up the delicious creamy sauce.
