- 1 pound mozzarella balls preferably ciliegine
- 3/4 cup extra virgin olive oil
- 1 teaspoon minced garlic
- 1/4 cup finely chopped fresh basil
- 4 teaspoons lemon zest
- 1/4 cup fresh lemon juice
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- Toasted crostini crackers, or bread for serving
Drain the mozzarella balls and place them into a large jar or medium bowl.
In a small bowl, whisk together olive oil, minced garlic, chopped basil, lemon zest, lemon juice, red pepper flakes, and kosher salt.
Pour the marinade over the mozzarella balls and stir gently until coated.
Cover the bowl or jar and refrigerate the Marinated Mozzarella Balls for at least 1 hour, preferably overnight for deeper flavor.
Serve chilled or slightly cool with crostini, crackers, or fresh bread.
- Ciliegine mozzarella works best because the small size absorbs the marinade quickly.
