Ingredients

  • 4 cups gluten-free mashed potatoes
  • 12 gluten-free frozen chicken tenders
  • 8 pieces turkey ham
  • 1 cup shredded cheddar cheese
  • 1 can corn drained and heated
  • ½ cup diced green onions
  • ¼ cup sour cream
  • Oil spray for the air fryer

Instructions

  • Prepare the gluten-free mashed potatoes if you do not already have them on hand. Keep them warm.
  • Preheat the air fryer to 400°F (200°C). Lightly spray the basket with oil and arrange the frozen chicken tenders in a single layer.
  • Air fry the chicken tenders for 6–8 minutes, or according to the package directions, until crisp and fully cooked. Chop them into bite-sized pieces.
  • For an oven method, cook the chicken tenders according to the package directions, then cut them into pieces.
  • Cook the turkey ham until lightly crisp and heated through. Chop or crumble it into small pieces.
  • Heat the drained corn until warm.
  • To assemble the Loaded Mashed Potato Bowls, spoon about 1 cup of mashed potatoes into each bowl.
  • Sprinkle cheddar cheese over the warm potatoes so it begins to melt.
  • Add the crispy chicken pieces, warm corn, turkey ham, and diced green onions.
  • Finish each bowl with a dollop of sour cream and serve warm.

Notes

For a heartier meal, increase the amount of chicken or add extra cheese. You can also use homemade or leftover mashed potatoes.
For a lighter variation, use reduced-fat cheddar and sour cream, or replace some of the sour cream with plain Greek yogurt.
Serve these bowls with a simple green salad, roasted vegetables, or steamed broccoli for a more complete dinner.
