Lemon Herb Grilled Chicken Recipe

Lemon Herb Grilled Chicken is marinated with garlic, lemon, thyme, and rosemary.

Ingredients
  

  • 6 –8 boneless skinless chicken thighs
  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves crushed
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried thyme or 2 tablespoons fresh thyme, chopped
  • 1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, chopped

Instructions
 

  • Place the chicken thighs in a large zip-top bag or shallow container.
  • Add the olive oil, crushed garlic, black pepper, salt, lemon zest, lemon juice, thyme, and rosemary.
  • Seal the bag and massage the marinade until every piece of chicken is evenly coated.
  • Refrigerate for at least 20 minutes or up to overnight for maximum flavor.
  • Preheat your grill to medium heat and lightly oil the grates.
  • Remove the chicken from the marinade and discard any remaining marinade.
  • Grill the Lemon Herb Grilled Chicken for 4–6 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
  • Remove from the grill and let the chicken rest for 5 minutes before serving.

Notes

  • Garnish with fresh parsley and lemon wedges before serving.
  • Serve with grilled vegetables, roasted potatoes, rice, or a crisp green salad.
  • For extra citrus flavor, add additional lemon zest after grilling.
  • Adjust salt and pepper to taste before serving.
