Ingredients
  

For the Salad

  • 2 cups fresh mango cubed
  • 1 cup English cucumber diced
  • 1 cup blueberries
  • 1 medium ripe avocado diced
  • ¼ cup fresh cilantro chopped

For the Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Peel the mango and remove the pit. Cut the fruit into bite-sized cubes and place them in a large mixing bowl.
  • Wash the cucumber thoroughly. Dice into small cubes and add to the bowl.
  • Rinse the blueberries under cool water and drain well before adding them to the mixture.
  • Cut the avocado in half, remove the pit, and dice the flesh into chunks. Add to the bowl.
  • Gently fold all salad ingredients together using a spatula.
  • In a small bowl, whisk together olive oil, fresh lime juice, honey, salt, and black pepper until fully combined.
  • Pour the dressing over the salad.
  • Toss gently to coat all ingredients evenly.
  • Sprinkle chopped cilantro over the top and lightly mix again.
  • Serve the Juicy Mango Cucumber Salad with Blueberries immediately, or chill for up to one hour before serving.
