Ingredients
  

For the Chicken

  • 1½ pounds chicken tenders or boneless skinless chicken breasts, cut into bite-sized chunks
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

For the Egg Wash

  • 2 large eggs
  • 1 tablespoon milk
  • 2 teaspoons hot sauce

For the Crispy Breading

  • ½ cup all-purpose flour
  • ½ cup panko breadcrumbs
  • ¼ cup cornstarch
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon chipotle pepper powder
  • Avocado oil or olive oil for frying

For the Hot Honey Garlic Sauce

  • 4 tablespoons salted butter
  • 4 garlic cloves minced
  • ½ cup raw honey
  • 2 tablespoons hot sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon red wine vinegar
  • Salt to taste

Instructions
 

Step 1: Season the Chicken

  • Place the chicken pieces in a large mixing bowl.
  • Add the salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper.
  • Toss everything together until the chicken is evenly coated with the seasoning mixture.
  • Set aside while preparing the breading ingredients.

Step 2: Prepare the Egg Wash

  • In a shallow bowl, whisk together the eggs, milk, and hot sauce until smooth and fully combined.
  • The egg wash helps the crispy coating adhere to the chicken during frying.

Step 3: Mix the Breading

  • In a separate shallow bowl, combine the all-purpose flour, panko breadcrumbs, cornstarch, paprika, salt, garlic powder, black pepper, and chipotle pepper powder.
  • Stir until all the dry ingredients are evenly distributed.

Step 4: Coat the Chicken

  • Dip each seasoned chicken piece into the egg wash, allowing any excess liquid to drip off.
  • Transfer the chicken to the breading mixture and coat it thoroughly.
  • Press the breading gently onto each piece to help create a thick, crispy exterior.
  • Arrange the coated chicken on a plate or wire rack and allow it to rest for 5–10 minutes while heating the oil.

Step 5: Fry Until Golden and Crispy

  • Pour approximately 1 inch of avocado oil or olive oil into a deep skillet.
  • Heat over medium heat until the oil reaches approximately 350°F (175°C).
  • Carefully add the breaded chicken pieces in batches, leaving enough space between them.
  • Fry for approximately 3–4 minutes per side, depending on the size of the pieces, until the coating is golden brown and the chicken is fully cooked.
  • The internal temperature should reach 165°F (74°C).
  • Transfer the cooked chicken to a wire rack or paper towel-lined plate to drain excess oil.
  • Repeat with the remaining chicken.

Step 6: Prepare the Hot Honey Garlic Sauce

  • In a medium saucepan, melt the salted butter over medium heat.
  • Continue cooking for approximately 2–3 minutes, stirring frequently, until the butter becomes foamy.
  • Add the minced garlic and cook for another 2–3 minutes, stirring constantly, until fragrant and lightly golden.
  • Reduce the heat if necessary to prevent the garlic from burning.
  • Add the honey, hot sauce, garlic powder, red pepper flakes, red wine vinegar, and a pinch of salt.
  • Whisk until the ingredients form a smooth, glossy sauce.
  • Allow the sauce to warm gently for 1–2 minutes, then remove it from the heat.

Step 7: Coat the Chicken

  • Place the crispy chicken in a large mixing bowl.
  • Pour the warm sauce over the chicken and toss gently until every piece is evenly coated.

Step 8: Garnish and Serve

  • Transfer the coated chicken to a serving platter.

Chicken Options

Boneless, skinless chicken breasts and chicken tenders both work beautifully in this recipe.
Chicken thighs can also be used for a slightly richer flavor and juicier texture. Adjust the frying time as needed to ensure the chicken reaches a safe internal temperature.
