Cook ground beef in a skillet over medium heat until browned. Season with salt and pepper, then set aside.
In the same skillet, cook beef bacon until crispy, about 5–7 minutes. Chop into pieces.
Thinly slice the apples.
Assemble sandwich: layer cheddar cheese, ground beef, beef bacon, apple slices, and drizzle hot honey. Top with another cheese slice and bread.
Melt butter in skillet and grill sandwich 3–4 minutes per side until golden and crispy.
Remove, rest briefly, slice, and serve warm with extra hot honey.
