Ingredients
  

  • 1 tbsp cornflour cornstarch
  • 2 tbsp water
  • 1 tbsp freshly minced garlic
  • 1 tsp freshly grated ginger
  • 60 ml ¼ cup light soy sauce
  • 1 tbsp dark soy sauce
  • 60 g ¼ cup honey
  • 1 tbsp rice wine vinegar
  • ½ tsp freshly cracked black pepper
  • 1 tbsp sesame oil
  • 1 tbsp light olive oil or neutral oil
  • 6 boneless chicken thighs skin on or off
  • 2 red onions sliced into wedges
  • 1 large bunch broccolini trimmed

To Serve

  • Sesame seeds
  • Fresh chili sliced (optional)
  • Fresh coriander sprigs

Instructions
 

  • Preheat oven to 200°C (400°F).
  • In a bowl, whisk together cornflour and water until smooth.
  • Add garlic, ginger, light soy sauce, dark soy sauce, honey, vinegar, black pepper, sesame oil, and olive oil. Mix well.
  • Place chicken thighs, red onions, and broccolini on a large baking tray.
  • Pour the sauce evenly over everything and toss gently to coat.
  • Bake for 30–35 minutes, turning once, until chicken is cooked through and caramelized.
  • Garnish with sesame seeds, chili, and coriander before serving.

Notes

  • Swap broccolini with regular broccoli or green beans.
  • Serve with steamed rice, noodles, or quinoa.
  • Adjust honey for sweetness preference.
