Prep the chicken: Cut chicken into bite-sized pieces and toss with cornstarch until evenly coated.
Cook the chicken: Heat oil in a skillet over medium-high heat. Cook chicken for 6–8 minutes until golden and crispy.
Make the sauce: Whisk soy sauce, honey, chicken broth, sriracha, vinegar, garlic, and ginger.
Combine chicken & sauce: Lower heat to medium and pour sauce into skillet. Let it simmer gently.
Add slurry: Mix cornstarch and water, then whisk into the skillet.
