Ingredients
  

  • 4 large eggs
  • 1/2 cup 2% cottage cheese
  • 1/8 teaspoon kosher salt
  • Fresh ground black pepper to taste
  • Olive oil spray

Instructions
 

  • In a medium bowl, whisk together the eggs, cottage cheese, kosher salt, and black pepper using a fork.
  • Heat a medium nonstick skillet over medium-low heat and lightly spray with olive oil.
  • Once warm, pour in the egg mixture.
  • Using a rubber spatula, gently scrape the eggs toward the center as they begin to set.
  • Continue cooking for about 1 1/2 to 2 minutes, forming soft folds.
  • Remove from heat while slightly soft for perfectly creamy high protein scrambled eggs with cottage cheese.
  • Serve immediately.
