High Protein Egg Bites Recipe

Ingredients
  

  • 8 large eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon fine sea salt
  • 1 8-ounce jar sun-dried tomatoes in oil, drained and roughly chopped
  • 1 large handful fresh baby spinach roughly chopped
  • 1/3 cup julienned fresh basil leaves
  • Crumbled feta cheese for topping
  • Freshly ground black pepper for topping
  • Cooking spray

Instructions
 

  • Prep the Oven and Muffin Pan
  • Preheat the oven to 350°F (175°C). Generously coat a 12-cup muffin pan with cooking spray to prevent sticking.
  • Blend the Egg Mixture
  • In a blender, combine the eggs, cottage cheese, and sea salt. Blend for a few seconds until the mixture becomes smooth and creamy.
  • Add the Vegetables
  • Transfer the mixture to a bowl if needed, then stir in the chopped sun-dried tomatoes, spinach, and fresh basil until evenly combined.
  • Fill the Muffin Cups
  • Pour the High Protein Egg Bites mixture evenly into the prepared muffin cups. Sprinkle the tops with crumbled feta cheese and freshly cracked black pepper.
  • Bake
  • Bake for 20–22 minutes, or until the egg bites are puffed and lightly firm in the center.
  • Cool and Serve
  • Allow the egg bites to cool in the pan for at least 5 minutes before removing. Serve warm and enjoy.
