Step 1: Cook the Turkey
Heat ½ tablespoon olive oil in a skillet over medium heat. Add the ground turkey and break it apart using a wooden spoon. Sprinkle in the taco seasoning and cook until the turkey is no longer pink, about 6–8 minutes. Taste and season with salt and pepper if needed. Transfer to a plate.
Step 2: Make the Cottage Cheese Eggs
Crack the eggs into a bowl. Add the cottage cheese along with a pinch of salt and pepper. Whisk until smooth.
Heat a nonstick skillet over medium-low heat with butter. Pour in the egg mixture and gently fold as it cooks until the eggs are soft, fluffy, and fully set. Remove from heat.
Step 3: Cook the Potatoes
Carefully wipe out the turkey skillet and heat the remaining olive oil over medium heat.
Wrap the shredded potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This helps them become crispy.
Spread the potatoes evenly into the skillet. Season lightly with salt and pepper and gently press them down. Cook undisturbed for 4–5 minutes before flipping and cooking until both sides are golden brown and crisp.
Step 4: Assemble the High Protein Breakfast Bowl
Divide the crispy potatoes, scrambled eggs, and seasoned turkey evenly between two bowls. Add your favorite toppings such as avocado, shredded cheese, salsa, fresh herbs, or tomatoes, then serve immediately.
