Ingredients

  • 1 cup plain Greek yogurt
  • ½ cup creamy peanut butter
  • 2 tablespoons maple syrup or honey optional
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons mini chocolate chips
  • Pinch of flaky sea salt
  • Optional: 2 tablespoons chopped roasted peanuts
  • Optional: Melted dark chocolate for drizzling

Instructions

  • In a medium mixing bowl, combine the Greek yogurt, creamy peanut butter, maple syrup (or honey), and vanilla extract. Stir until completely smooth and creamy.
  • Line a loaf pan, small baking dish, or silicone mold with parchment paper for easy removal.
  • Spread the mixture evenly into the prepared pan and smooth the top using a spatula.
  • Sprinkle mini chocolate chips evenly over the top, followed by a pinch of flaky sea salt. If desired, add chopped roasted peanuts or drizzle with melted dark chocolate.
  • Freeze for 2 to 3 hours, or until the Healthy Peanut Butter Frozen Bites are completely firm.
  • Remove from the freezer and let sit for 2 to 3 minutes before slicing into bite-sized squares or removing from the molds.
  • Serve immediately and store leftovers in an airtight freezer-safe container.

Notes

  • Honey creates a slightly richer sweetness, while maple syrup adds subtle caramel notes.
  • Dark chocolate chips can be substituted for mini chocolate chips.
  • Add cinnamon for extra warmth and flavor.
  • Top with crushed freeze-dried strawberries for a fruity twist.
  • These pair wonderfully with fresh berries or banana slices.
