Ingredients
  

  • 1 cucumber peeled and chopped
  • 1 cup cherry tomatoes
  • 2 scallions chopped
  • 1 tablespoon olive oil
  • 1/3 green bell pepper chopped
  • 1/4 avocado chopped
  • 1/4 cup olives pitted and chopped
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Peel and chop the cucumber into bite-sized pieces.
  • Halve the cherry tomatoes if desired.
  • Chop the scallions, green bell pepper, avocado, and olives.
  • Add all ingredients to a large mixing bowl.
  • Drizzle the olive oil over the vegetables.
  • Season with salt and black pepper to taste.
  • Toss gently until everything is evenly combined.
