Healthy Cosmic Brownie Protein Balls are an easy no-bake snack made with almond flour, chocolate protein powder, and nut butter.
They're gluten free, vegan-friendly, and naturally rich in chocolate flavor.

Ingredients
  

  • ½ cup almond flour
  • 1 scoop chocolate protein powder about ½ cup
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup or honey
  • ¼ cup cashew butter almond butter, or peanut butter
  • 1 teaspoon vanilla extract
  • 2 –4 tablespoons milk of choice
  • ¼ cup chocolate chips
  • 1 teaspoon coconut oil
  • 2 tablespoons rainbow candy sprinkles optional

Instructions
 

  • Line a small tray or plate with parchment paper.
  • In a medium bowl, combine almond flour, chocolate protein powder, and cocoa powder.
  • Add the nut butter, maple syrup, and vanilla extract. Stir until combined.
  • Add milk one tablespoon at a time until the dough becomes soft, smooth, and easy to roll.
  • Roll into 8–10 evenly sized Healthy Cosmic Brownie Protein Balls and place them on the prepared tray.
  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave for 20–30 seconds, stir, and repeat until completely smooth.
  • Dip each protein ball into the melted chocolate, allowing excess chocolate to drip off.
  • Sprinkle with rainbow candy sprinkles while the chocolate is still wet.
  • Freeze for 20–30 minutes until the coating is firm.
  • Enjoy immediately or store for later.

Notes

 

  • Use your favorite plant-based milk such as almond, oat, or soy milk.
  • Decorate with naturally colored sprinkles for a healthier option.
  • These make an excellent lunchbox snack.
  • They also pair well with fresh berries or a smoothie for a satisfying breakfast.
