Cookie Dough

  • 1½ cups almond flour
  • ¼ cup cashew butter or peanut butter
  • ¼ cup maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup chocolate chips

Chocolate Topping

  • 1 cup chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt optional

Instructions
 

  • In a medium mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until a soft dough forms.
  • Fold in the chocolate chips until evenly distributed.
  • Line a cutting board or tray with parchment paper.
  • Transfer the dough onto the parchment and press firmly into an even rectangle about ½-inch thick.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil.
  • Microwave in 30-second intervals, stirring after each, until completely smooth.
  • Pour the melted chocolate over the cookie dough and spread evenly using a spatula.
  • Sprinkle with flaky sea salt if desired.
  • Freeze for about 10 minutes, or until the chocolate has hardened.
  • Break or slice the Healthy Cookie Dough Bark into large pieces and serve immediately or store for later.
