Ingredients
  

  • 1 cup quick cooking rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 1 large egg
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup sugar-free dark chocolate chips

Instructions
 

  • Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  • In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and kosher salt.
  • Add the honey, egg, melted coconut oil, and vanilla extract. Stir until everything is fully combined.
  • Fold in the sugar-free dark chocolate chips.
  • Scoop the dough using level tablespoons and place onto the prepared baking sheets.
  • Bake the Healthy Chocolate Chip Oat Cookies for 8–10 minutes, or until lightly golden around the edges.
  • Let the cookies cool on the baking sheet for several minutes before transferring to a wire rack.
  • Serve warm or store for later.

Notes

  • Maple syrup can replace honey if preferred.
  • Coconut sugar may be added for a sweeter cookie.
