Healthy Beef and Broccoli (15 Minute Dinner)

Ingredients
  

  • 1 tablespoon olive oil divided
  • 1 ½ lbs flank steak very thinly sliced across the grain
  • 3 cloves garlic minced
  • 1 shallot finely chopped
  • 4 green onions thinly sliced
  • 4 cups broccoli florets about 2 small crowns
  • 2 tablespoons arrowroot starch
  • ¾ cup water
  • cup low-sodium soy sauce
  • 2 tablespoons coconut sugar
  • 1 teaspoon fresh ginger minced
  • teaspoon crushed red pepper flakes

Instructions
 

  • Heat half of the olive oil in a skillet over medium-high heat. Add the sliced beef and cook until browned, about 6–8 minutes. Remove from the pan and set aside.
  • In the same pan, add the remaining oil, garlic, shallot, and green onions. Cook for about 1 minute until fragrant.
  • Add broccoli florets to the pan and cover. Steam for about 5 minutes until slightly tender.
  • In a small bowl, whisk together water and arrowroot starch until smooth.
  • In another bowl, mix soy sauce, coconut sugar, ginger, and red pepper flakes. Stir in the arrowroot mixture to create the sauce for this Healthy Beef and Broccoli dish.
  • Remove the lid from the pan and pour in the sauce. Cook 3–5 minutes until the sauce thickens.
  • Return the beef to the skillet and toss everything together. Cook for 2–3 minutes until heated through.
  • Serve warm over brown rice if desired.

Notes

This Healthy Beef and Broccoli recipe pairs well with brown rice, quinoa, or cauliflower rice for a lower-carb option. You can also serve it with whole-grain noodles for a heartier meal.
