Healthy Beef and Broccoli

Healthy Beef and Broccoli is a quick stir-fry made with tender beef and fresh broccoli.
Cooked in a savory garlic ginger sauce.

Ingredients
  

  • 1 lb flank steak sliced very thin
  • 1/4 tsp black pepper
  • 1/3 cup low sodium soy sauce
  • 2 tbsp water
  • 1 tbsp brown sugar or coconut sugar
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil
  • 4 cups broccoli florets

Instructions
 

  • Blanch broccoli in boiling water for 2–3 minutes until bright green. Drain, rinse with cold water, and pat dry.
  • Slice the flank steak thinly and season with black pepper.
  • In a bowl, mix soy sauce, water, sugar, garlic, ginger, and cornstarch.
  • Heat half the sesame oil in a skillet over high heat. Cook beef until just done, then remove.
  • Add remaining oil and cook broccoli for 1–2 minutes.
  • Return beef to the pan, pour in sauce, and cook until thickened.
  • Serve Healthy Beef and Broccoli immediately.

Notes

  • Serve with brown rice, quinoa, or cauliflower rice
  • Adjust sweetness by adding more or less sugar
  • Great for meal prep lunches
