Cuisine American
- 1 cup plain Greek yogurt 2% or 5% fat preferred
- 2 small to medium ripe bananas with brown spotting
- 1 –2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 8 –10 Nilla wafers roughly crumbled
- 4 tbsp whipped cream
Add the Greek yogurt, one banana, maple syrup, and vanilla extract to a small blender or NutriBullet.
Blend until just combined. Do not over-blend the mixture into a thin liquid. A few small banana lumps create the best texture.
Slice the remaining banana into thin coins.
Assemble the Healthy Banana Pudding with Greek Yogurt in two 10-ounce jars.
Start with a layer of the blended pudding mixture.
Add a layer of banana slices followed by crushed Nilla wafers.
Repeat the layers with more pudding, banana slices, and wafers.
Top each jar with whipped cream and the remaining crushed wafers.
Cover and refrigerate overnight for a thicker texture, or enjoy immediately.
- Add chopped walnuts or pecans for crunch.
- Use gluten-free vanilla wafers if needed.
- Layer in mason jars for easy meal prep desserts.
- Fresh strawberries also pair beautifully with this healthy banana pudding recipe.
