Ingredients
  

  • 2 cups whole wheat flour or gluten-free all-purpose flour
  • 1/4 cup old-fashioned oats plus extra for topping
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon optional
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas 2–3 large bananas
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1/3 cup olive oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a muffin tin.
  • In a bowl, mix flour, oats, baking soda, cinnamon, and salt.
  • In another bowl, whisk bananas, eggs, honey, olive oil, milk, and vanilla.
  • Combine wet and dry ingredients and mix gently until just combined.
  • Divide batter into 12 muffin cups and sprinkle oats on top.
  • Bake Healthy Banana Oatmeal Muffins for 20–25 minutes until a toothpick comes out clean.

Notes

  • You can substitute honey with maple syrup for a vegan-friendly version (use flax eggs)
  • Serve warm with yogurt or nut butter
