Ground Turkey Sweet Potato Skillet

A quick one-pan Ground Turkey Sweet Potato Skillet made with lean turkey, sweet potatoes, and simple spices.

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 1 pound extra-lean ground turkey
  • 1 teaspoon garlic minced
  • ½ cup onions diced
  • ½ cup yellow pepper diced
  • cups sweet potato diced
  • Salt and freshly ground black pepper
  • A pinch of red chili flakes optional
  • ½ cup shredded mozzarella cheese optional
  • Fresh parsley for garnish optional

Instructions
 

  • Heat olive oil in a cast iron skillet over medium-high heat.
  • Add ground turkey and garlic, breaking the meat apart as it cooks for about 5 minutes.
  • Stir in onions and yellow pepper; cook until softened.
  • Add diced sweet potatoes, salt, pepper, and chili flakes.
  • Cover and cook, stirring occasionally, until sweet potatoes are tender. Add a splash of water if needed.
  • Preheat oven to 400°F (200°C).
  • Once tender, sprinkle mozzarella cheese over the skillet.
  • Transfer to the oven and bake until cheese melts.
  • Remove, garnish with parsley, and serve warm.

Notes

  • Skip cheese for Paleo or Whole30 versions
  • Serve with a side salad or rice for a fuller meal
  • Add avocado slices for extra creaminess
