For the Skillet

  • 1 pound lean ground beef
  • 2 medium sweet potatoes diced
  • 1 medium bell pepper diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the ground beef and cook for 5–7 minutes until browned, breaking it apart as it cooks.
  • Stir in the chopped onion and minced garlic. Cook for 2–3 minutes until the onion becomes translucent.
  • Add the diced sweet potatoes and cook for about 5 minutes, stirring occasionally.
  • Season with smoked paprika, cumin, salt, and black pepper.
  • Cover the skillet and cook for 10–15 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
  • Add the diced bell pepper during the last 2–3 minutes of cooking.
  • Remove from heat and garnish with fresh parsley.
