  • 1 lb lean ground beef
  • 2 cups frozen peas
  • 2 Tbsp taco seasoning
  • 2 cups white rice
  • 1 Tbsp olive oil
  • 4 eggs
  • Salt to taste
  • Black pepper to taste
  • Red chili flakes optional

Instructions
 

  • Heat a large skillet over medium heat and cook the ground beef for 8 to 10 minutes, breaking it up with a wooden spoon as it browns.
  • Stir in the frozen peas and taco seasoning. Cook for 5 more minutes, until the peas are heated through and the beef is well seasoned.
  • Meanwhile, cook the white rice according to the package directions.
  • In a separate pan, heat the olive oil over medium heat. Crack in the eggs and season with salt and pepper. Cook them to your preferred doneness, such as sunny-side up or over easy.
