Ingredients
  

For the Steak

  • 1 lb sirloin or ribeye steak
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt or to taste
  • ¼ teaspoon freshly ground black pepper

For the Grilled Zucchini

  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For the Quinoa

  • 1 cup uncooked quinoa
  • 2 cups water
  • ¼ teaspoon salt
  • 1 teaspoon olive oil optional

For the Creamy Garlic Sauce

  • ½ cup sour cream or plain Greek yogurt
  • 1 tablespoon alcohol-free Dijon mustard
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1 teaspoon fresh lemon juice optional
  • ¼ teaspoon salt or to taste
  • 1 –2 tablespoons water as needed

Instructions
 

  • Step 1: Prepare and Season the Steak
  • Remove the steak from the refrigerator about 20–30 minutes before grilling.
  • Pat it dry with paper towels to help develop a beautiful crust.
  • Rub both sides with olive oil, garlic powder, smoked paprika, salt, and freshly ground black pepper.
  • Allow the steak to rest briefly while you prepare the remaining ingredients.
  • Step 2: Prepare the Zucchini
  • Wash the zucchinis and trim off the ends.
  • Slice them lengthwise into thick strips or cut them into approximately ½-inch rounds.
  • Place the zucchini in a bowl and toss with olive oil, salt, and black pepper.
  • Make sure each piece is lightly coated for even grilling.
  • Step 3: Cook the Quinoa
  • Rinse the quinoa thoroughly under cold running water.
  • Add the quinoa, water, and salt to a medium saucepan.
  • Bring to a boil, then reduce the heat to low and cover.
  • Simmer for approximately 15 minutes, or until the liquid has been absorbed.
  • Remove from the heat and let the quinoa rest, covered, for 5 minutes.
  • Fluff with a fork and stir in a teaspoon of olive oil if desired.
  • Step 4: Grill the Zucchini
  • Preheat a grill or grill pan over medium-high heat.
  • Place the zucchini directly on the hot grill.
  • Cook for approximately 2–3 minutes per side, depending on thickness.
  • The zucchini should develop attractive grill marks while remaining tender with a slight bite.
  • Transfer to a plate and set aside.
  • Step 5: Grill the Steak
  • Place the seasoned steak on the hot grill.
  • Cook for approximately 4–5 minutes per side for a medium-rare steak about 1 inch thick, adjusting the time according to thickness and preferred doneness.
  • Use a meat thermometer to check the internal temperature. For food safety, cook whole beef steaks to at least 145°F (63°C), followed by a 3-minute rest.
  • Transfer the steak to a cutting board and allow it to rest for 5–10 minutes.
  • Slice thinly against the grain for the most tender bites.
  • Step 6: Make the Creamy Garlic Sauce
  • In a small mixing bowl, combine the sour cream or Greek yogurt, alcohol-free Dijon mustard, garlic powder, smoked paprika, lemon juice, and salt.
  • Whisk until completely smooth.
  • Add water, one tablespoon at a time, until the sauce reaches your preferred drizzling consistency.
  • Taste and adjust the seasoning if needed.
  • Step 7: Assemble the Bowls
  • Divide the cooked quinoa evenly among four serving bowls.
  • Arrange the grilled zucchini over the quinoa.
  • Add the sliced steak, distributing it evenly between the bowls.
  • Drizzle generously with the creamy garlic sauce.
  • Serve your Grilled Steak Bowl immediately while the steak and zucchini are warm.
