Ingredients
  

For the Seasoned Breadcrumbs

  • cups day-old bread baguette, Italian loaf, or sourdough, crusts removed
  • 1 tablespoon olive oil
  • teaspoons Old Bay seasoning
  • ¼ teaspoon salt

For the Shrimp

  • 1 pound medium shrimp peeled and deveined
  • 2 teaspoons olive oil
  • 2 teaspoons Old Bay seasoning
  • teaspoon cayenne pepper optional
  • ¼ teaspoon salt

For the Caesar Salad

  • 1 head romaine lettuce washed, dried, and torn into bite-sized pieces
  • –½ cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese

Instructions
 

Make the Seasoned Breadcrumbs

  • Preheat the oven to 350°F (175°C).
  • Tear the bread into small chunks after removing the crusts.
  • Pulse the bread in a food processor until you have coarse breadcrumbs with small rustic pieces.
  • Spread the breadcrumbs on a baking sheet.
  • Drizzle with olive oil, sprinkle with Old Bay seasoning and salt, then toss well.
  • Bake for 8–10 minutes until golden brown and crisp.
  • Allow the breadcrumbs to cool completely.

Grill the Shrimp

  • Preheat the grill to medium-high heat (450–500°F).
  • Place the shrimp in a bowl.
  • Drizzle with olive oil and toss to coat evenly.
  • Add Old Bay seasoning, cayenne pepper (if using), and salt.
  • Thread the shrimp onto skewers by piercing near the head and tail.
  • Grill for about 2 minutes per side until pink, opaque, and juicy.
  • Remove from the grill and set aside.

Assemble the Grilled Shrimp Caesar Salad

  • Place the romaine lettuce into a large serving bowl.
  • Add the Caesar dressing and toss gently until evenly coated.
  • Mix in the grated Parmesan cheese.
  • Divide the salad among four serving plates.
  • Sprinkle generously with the homemade breadcrumbs.
  • Remove the shrimp from the skewers and arrange over each salad.
  • Finish with extra Parmesan cheese if desired and serve immediately.

This Grilled Shrimp Caesar Salad is best enjoyed fresh while the shrimp are warm and the breadcrumbs stay crisp.
