Ingredients
  

For the Grilled Salmon

  • Juice of 3 limes divided
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon honey
  • 4 salmon fillets 6 oz each, skin-on
  • Kosher salt
  • Freshly ground black pepper

For the Pineapple Salsa

  • 1 1/2 cups chopped pineapple
  • 1/4 red onion finely chopped
  • 1 tablespoon fresh cilantro chopped
  • Remaining lime juice
  • Salt and pepper to taste

Instructions
 

Step 1: Prepare the Honey Lime Sauce

  • In a large bowl, whisk together the juice of 2 limes, olive oil, and honey until smooth and well combined.

Step 2: Season the Salmon

  • Pat the salmon fillets dry with paper towels. Season both sides with kosher salt and freshly ground black pepper.

Step 3: Grill the Salmon

  • Preheat the grill to high heat. Brush the salmon with the honey-lime mixture and place skin-side down on the grill.
  • Cook for 5 to 6 minutes per side, brushing occasionally with more sauce, until the salmon is flaky and fully cooked.

Step 4: Make the Pineapple Salsa

  • In a medium bowl, combine chopped pineapple, red onion, cilantro, and the remaining lime juice. Season with salt and black pepper to taste.

Step 5: Serve

  • Transfer the Grilled Salmon with Pineapple Salsa to serving plates and spoon the fresh salsa generously over the top. Serve immediately while warm.
