Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 cup cooked brown rice
  • 1 tablespoon lime juice
  • 1 small avocado sliced
  • 2 cups mixed greens
  • ½ cup black beans
  • ½ cup corn canned or grilled
  • cup cherry tomatoes quartered
  • 2 tablespoons Greek yogurt
  • ½ red onion diced
  • 1 jalapeño pepper sliced
  • Sea salt and black pepper to taste
  • Fresh cilantro chopped

Chicken Marinade:

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • Salt and pepper

Instructions
 

  • In a zip-top bag, mix all marinade ingredients until well combined.
  • Add the chicken breasts, seal, and coat evenly. Let marinate for at least 15–30 minutes.
  • Heat a grill pan or outdoor grill over medium-high heat. Cook chicken for 5–7 minutes per side until fully cooked.
  • Remove and let rest for 5 minutes, then slice.
  • In a bowl, mix cooked brown rice with lime juice, cilantro, salt, and pepper.
  • To assemble the Grilled Chicken Burrito Bowl, start with mixed greens, add sliced chicken, then layer remaining ingredients.
  • Top with Greek yogurt, jalapeño, and extra cilantro. Serve immediately.

Notes

  • You can substitute chicken with grilled shrimp or tofu.
  • Add cheese if desired for extra richness.
  • Serve with tortilla chips for crunch.
