Ingredients
  

  • Chicken thighs or breasts
  • Long-grain rice
  • Fresh cilantro parsley, or spinach
  • Garlic
  • Onion
  • Chicken broth
  • Lime juice
  • Olive oil
  • Salt
  • Black pepper
  • Mild spices optional

Instructions
 

  • Season the chicken with salt, pepper, and mild spices. Set aside.
  • Blend herbs, leafy greens, garlic, lime juice, and a little broth until smooth.
  • Heat oil in a large pan and sear the chicken until lightly golden. Remove and set aside.
  • In the same pan, sauté onion until soft. Add rice and stir to coat.
  • Pour in broth and the green mixture, stirring to combine evenly.
  • Return the chicken to the pan, placing it over the rice. Cover and simmer gently.
