Ingredients

  • 2 lbs lamb rib chops
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 –2 garlic cloves finely minced
  • 1 tablespoon dried oregano
  • 1 teaspoon fresh rosemary finely chopped
  • 1 tablespoon avocado or vegetable oil for grilling
  • Lemon wedges for garnish
  • Fresh oregano for garnish
  • Flaky sea salt for garnish

Instructions

  • Season the lamb. Place the lamb chops in a single layer on a rimmed baking dish or plate. Season both sides with kosher salt and freshly ground black pepper, gently pressing the seasoning into the meat.
  • Prepare the marinade. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, and chopped rosemary.
  • Marinate the chops. Pour the marinade over the lamb, turning the chops so they are evenly coated. Cover and refrigerate overnight for deeper flavor, or let the chops marinate at room temperature for 30 minutes. If using the shorter method, turn the chops after 15 minutes.
  • Preheat the pan or grill. Heat a large cast iron skillet or grill pan over medium-high heat. Add a little avocado or vegetable oil once the pan is hot. For outdoor grilling, preheat the grill to medium-high.
  • Cook the lamb. Arrange the chops in a single layer without overcrowding the pan or grill. Cook the Greek lamb chops for about 3–4 minutes per side, adjusting the cooking time according to the thickness of the chops and your preferred level of doneness.
  • Rest and serve. Transfer the cooked lamb to a plate and let it rest for a few minutes. Finish with lemon wedges, fresh oregano, and a small pinch of flaky sea salt before serving.

Notes

For a stronger Mediterranean-style meal, serve the lamb with a Greek salad, roasted potatoes, warm pita, rice, or a simple cucumber and tomato salad.
You can substitute fresh rosemary with a little extra dried oregano if needed. If you prefer a milder garlic flavor, start with one garlic clove. Avocado oil is a good choice for high-heat cooking, but a neutral vegetable oil also works well.
