Greek Chicken Bowls with Homemade Tzatziki

Ingredients
  

Greek Chicken Marinade

  • 1½ pounds boneless skinless chicken breasts
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 teaspoons minced garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Homemade Tzatziki Sauce

  • 1¼ cups plain Greek yogurt
  • ½ cucumber finely diced and squeezed to remove excess moisture
  • 1 teaspoon minced garlic
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons dried dill
  • 1 teaspoon salt

For Assembling the Bowls

  • 4 cups cooked rice or quinoa
  • 4 cups shredded romaine lettuce
  • 2 cups grape tomatoes halved
  • 2 cups cucumber peeled and diced
  • 1 cup crumbled feta cheese
  • ½ cup diced red onion optional
  • Olive Garden Italian dressing to taste, or a halal-suitable Italian dressing
  • 1 tablespoon olive oil for cooking the chicken

Instructions
 

Step 1: Prepare the Greek Chicken Marinade

  • Place the chicken breasts in a large resealable plastic bag or shallow container.
  • Add the extra virgin olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  • Seal the bag or cover the container, then gently mix everything until the chicken is evenly coated with the marinade.
  • Refrigerate for at least 30–60 minutes to allow the flavors to develop.
  • For a stronger Mediterranean flavor, you can marinate the chicken for up to 4 hours.

Step 2: Make the Homemade Tzatziki Sauce

  • While the chicken marinates, prepare the tzatziki.
  • Finely dice the cucumber and squeeze out excess moisture using a clean kitchen towel or paper towels.
  • In a medium bowl, combine the Greek yogurt, prepared cucumber, minced garlic, lemon juice, dried dill, and salt.
  • Stir until the ingredients are evenly distributed and the sauce becomes smooth and creamy.
  • Cover and refrigerate until you're ready to assemble the bowls.
  • Chilling allows the garlic, lemon, and dill flavors to blend together.

Step 3: Cook the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Remove the chicken from the marinade and allow any excess marinade to drip off.
  • Place the chicken breasts in the hot skillet without overcrowding the pan.
  • Cook for approximately 6–8 minutes per side, depending on thickness, until the chicken is golden brown and cooked through.
  • Use a meat thermometer to confirm that the thickest part of the chicken reaches an internal temperature of 165°F (74°C).
  • Transfer the cooked chicken to a cutting board and allow it to rest for approximately 5 minutes.
  • Slice the chicken into strips or bite-sized pieces.

Step 4: Prepare the Bowl Ingredients

  • While the chicken rests, prepare your rice or quinoa according to the package instructions if you haven't already cooked it.
  • Wash and shred the romaine lettuce.
  • Halve the grape tomatoes, dice the cucumber, and finely chop the red onion if using.
  • Have the crumbled feta cheese, chilled tzatziki sauce, and Italian dressing ready for assembling.

Step 5: Assemble the Bowls

  • Divide the cooked rice or quinoa evenly among four serving bowls.
  • Add a generous portion of shredded romaine lettuce to each bowl.
  • Arrange the sliced chicken, grape tomatoes, diced cucumber, feta cheese, and optional red onion over the grains.
  • Spoon the homemade tzatziki sauce over the chicken and vegetables.
  • Finish with a light drizzle of Italian dressing.
  • Your Greek Chicken Bowls are now ready to serve.

Step 6: Serve and Enjoy

  • Serve immediately while the chicken and grains are warm and the vegetables remain fresh and crisp.
  • Add extra tzatziki sauce, a squeeze of fresh lemon juice, or additional feta cheese if desired.

Notes

Rice or quinoa: Both work beautifully in this recipe. Brown rice provides a heartier texture, while quinoa offers a slightly nutty flavor.
Extra vegetables: Add sliced bell peppers, shredded carrots, or chopped spinach for additional color and texture.
More Mediterranean flavor: Sprinkle extra dried oregano over the finished bowls or serve with fresh lemon wedges.
Dairy-free variation: Replace the Greek yogurt with an unsweetened dairy-free yogurt and omit the feta cheese or use a suitable dairy-free alternative.
Lighter serving option: Replace some or all of the rice with additional romaine lettuce for a vegetable-forward bowl.
