Ingredients
  

For the chicken and rice

  • 2 pounds skinless boneless chicken thighs
  • 2 tablespoons dried oregano divided
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • teaspoon salt
  • ¾ teaspoon pepper
  • 4 tablespoons olive oil divided
  • 1 white onion chopped
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 medium lemon zest and juice

Chopped Greek salad

  • 2 medium tomatoes
  • ½ cucumber
  • ½ red onion
  • ounces feta cheese

Quick tzatziki

  • 1 cup Greek yogurt
  • ½ cucumber cubed
  • ½ clove garlic crushed
  • 2 tablespoons fresh dill
  • Lemon juice optional

To serve (optional)

  • Fresh parsley
  • Pita bread
  • Lemon segments

Instructions
 

  • Season the chicken with oregano, paprika, cumin, garlic powder, salt, and pepper. Coat evenly.
  • Heat olive oil in a large pan and brown the chicken on both sides. Remove and set aside.
  • Mix chicken broth, remaining oregano, lemon zest, and juice.
  • In the same pan, sauté onions until soft, then stir in rice.
  • Pour in the broth mixture and stir. Place chicken on top.
  • Cover and cook for 20 minutes until rice is tender and chicken is fully cooked. This step creates the perfect Greek Chicken and Rice Bowl base.
  • Prepare salad by chopping vegetables and feta.
  • Mix all tzatziki ingredients until creamy.
  • Assemble bowls with rice, chicken, salad, and tzatziki. Serve with pita and lemon.
