Glazed Sourdough Lemon Cake That Melts in Your Mouth

Ingredients
  

For the Cake

  • ½ cup vegetable oil or melted butter
  • ¾ cup granulated sugar
  • 2 eggs
  • cups flour
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ cup sourdough starter discard
  • ¾ cup milk

For the Glaze

  • ½ cup powdered sugar
  • 2 teaspoons lemon zest
  • 2 teaspoons lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a loaf pan or 9×9 square pan.
  • In a large bowl, mix oil, sugar, and eggs until smooth.
  • In another bowl, combine flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, alternating with milk and sourdough discard. Mix gently.
  • Stir in lemon juice and zest.
  • Pour batter into the prepared pan.
  • Bake for 50–60 minutes (loaf pan) or 40–50 minutes (square pan).
  • Let the Glazed Sourdough Lemon Cake cool in the pan for 15 minutes.

Notes

  • You can replace vegetable oil with melted butter for a richer flavor
  • Serve with tea or coffee for a perfect afternoon treat
  • Add a thicker glaze if you prefer a sweeter finish
