Ingredients
  

  • 2 tablespoons olive oil divided
  • 2 tablespoons garlic and herb butter divided
  • 1 pound Yukon Gold potatoes cut into bite-sized cubes
  • 1 pound sirloin steak cut into bite-sized cubes
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper divided
  • 1 teaspoon garlic powder divided

Instructions
 

  • Heat a large cast-iron skillet over medium heat for 2–3 minutes.
  • Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter.
  • Once the butter has melted, add the cubed Yukon Gold potatoes.
  • Season the potatoes with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon black pepper.
  • Reduce heat to medium-low and cover with a lid.
  • Cook for 10–12 minutes, stirring occasionally, until the potatoes are fork-tender and golden brown.
  • While the potatoes cook, season the sirloin steak cubes with the remaining garlic powder, salt, and pepper.
  • Once the potatoes are cooked, push them to one side of the skillet or remove them temporarily.
  • Add the remaining olive oil and garlic herb butter to the empty side of the pan.
  • Increase heat to medium-high.
  • Add the seasoned steak bites and sear for 3–4 minutes per side until browned and cooked to your preferred doneness.
  • If necessary, cook the steak in batches to avoid overcrowding.
  • Reduce heat to medium-low.
  • Add additional garlic butter if desired and allow it to melt.
  • Toss the steak and potatoes together until evenly coated.
  • Taste and adjust seasonings.
  • Serve the Garlic Butter Steak Bites and Potatoes immediately.
