Heat a large cast-iron skillet over medium heat for 2–3 minutes.
Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter.
Once the butter has melted, add the cubed Yukon Gold potatoes.
Season the potatoes with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon black pepper.
Reduce heat to medium-low and cover with a lid.
Cook for 10–12 minutes, stirring occasionally, until the potatoes are fork-tender and golden brown.
While the potatoes cook, season the sirloin steak cubes with the remaining garlic powder, salt, and pepper.
Once the potatoes are cooked, push them to one side of the skillet or remove them temporarily.
Add the remaining olive oil and garlic herb butter to the empty side of the pan.
Increase heat to medium-high.
Add the seasoned steak bites and sear for 3–4 minutes per side until browned and cooked to your preferred doneness.
If necessary, cook the steak in batches to avoid overcrowding.
Reduce heat to medium-low.
Add additional garlic butter if desired and allow it to melt.
Toss the steak and potatoes together until evenly coated.
Taste and adjust seasonings.
Serve the Garlic Butter Steak Bites and Potatoes immediately.
