Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  • In a medium bowl, beat the eggs until foamy.
  • Mix in the milk and vanilla extract until well combined.
  • In a separate large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and granulated sugar.
  • Pour the wet ingredients into the dry ingredients and stir until the batter is smooth and lump-free.
  • Heat vegetable oil in a deep pot or heavy skillet to 375°F (190°C).
  • Carefully drop spoonfuls of batter into the hot oil, working in small batches so the pan does not get crowded.
  • Fry the Funnel Cake Bites for 1 to 2 minutes per side, or until golden brown and cooked through.
  • Transfer to a paper towel-lined plate to drain excess oil.
  • Dust generously with powdered sugar while still warm and serve immediately.

Notes

These bites are best served fresh and warm for the crispiest outside and softest center. For a fair-inspired dessert platter, serve them with fresh berries, whipped cream, or a drizzle of chocolate. A light dusting of cinnamon sugar also works well in place of plain powdered sugar.
