Thoroughly wash the strawberries and place them on a clean kitchen towel or paper towels to dry completely.
Remove the stems and cut the strawberries in half lengthwise.
Line a cookie sheet or tray with parchment paper or wax paper.
In a microwave-safe bowl, combine the white chocolate chips with 1 tablespoon coconut oil. Microwave in 30-second intervals, stirring between each interval, until smooth and fully melted.
Using a fork, dip each strawberry half into the melted white chocolate until fully coated. Allow excess chocolate to drip off before placing the strawberries onto the prepared tray.
Freeze the coated strawberries for 15 minutes.
In another microwave-safe bowl, combine the dark chocolate chips with the remaining coconut oil. Melt in 30-second intervals, stirring until smooth.
Remove the strawberries from the freezer and dip each piece into the dark chocolate to completely coat.
Place the strawberries back onto the lined tray and freeze again for another 15 minutes.
Transfer the Frozen Chocolate Covered Strawberries to an airtight container or freezer-safe bag and store in the freezer until ready to enjoy.
