Frozen Chocolate Covered Strawberries

Frozen Chocolate Covered Strawberries are a quick and easy frozen dessert made with fresh strawberries, white chocolate, and dark chocolate.

Ingredients
  

  • 1 pint fresh strawberries
  • 1 ½ cups dark chocolate chips
  • 1 ½ cups white chocolate chips
  • 2 tbsp refined coconut oil divided

Instructions
 

  • Thoroughly wash the strawberries and place them on a clean kitchen towel or paper towels to dry completely.
  • Remove the stems and cut the strawberries in half lengthwise.
  • Line a cookie sheet or tray with parchment paper or wax paper.
  • In a microwave-safe bowl, combine the white chocolate chips with 1 tablespoon coconut oil. Microwave in 30-second intervals, stirring between each interval, until smooth and fully melted.
  • Using a fork, dip each strawberry half into the melted white chocolate until fully coated. Allow excess chocolate to drip off before placing the strawberries onto the prepared tray.
  • Freeze the coated strawberries for 15 minutes.
  • In another microwave-safe bowl, combine the dark chocolate chips with the remaining coconut oil. Melt in 30-second intervals, stirring until smooth.
  • Remove the strawberries from the freezer and dip each piece into the dark chocolate to completely coat.
  • Place the strawberries back onto the lined tray and freeze again for another 15 minutes.
  • Transfer the Frozen Chocolate Covered Strawberries to an airtight container or freezer-safe bag and store in the freezer until ready to enjoy.

Notes

  • Semi-sweet chocolate can be used instead of dark chocolate for a sweeter flavor.
  • Serve directly from the freezer for the best texture.
