cooked sweet yellow corn kernels
from 3 cobs

small vine ripe tomatoes
seeded and diced

red onion

scallion

jalapeño
diced (seeds removed for mild flavor)

chopped cilantro
Juice of 1 fresh lime
Kosher salt and fresh pepper to taste
Instructions
In a large mixing bowl, combine the corn, tomatoes, red onion, scallion, and jalapeño.
Add chopped cilantro and fresh lime juice.
Season with salt and pepper to taste.
Gently mix until well combined.
Refrigerate the Fresh Corn Salsa for about 1 hour to allow flavors to blend.
Serve chilled and enjoy.
