For the Chicken Marinade

  • 2 large boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For Breading the Chicken

  • 1 cup all-purpose flour
  • 1 cup breadcrumbs

For the French Toast

  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 8 slices thick-cut challah or brioche bread
  • 2 tablespoons butter

  • Maple syrup

Step 1: Marinate the Chicken

  • In a large bowl, whisk together buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and coat thoroughly. Cover and refrigerate for at least 1 hour or overnight for deeper flavor.

Step 2: Prepare the French Toast Mixture

  • In a shallow dish, whisk together eggs, milk, and vanilla extract until smooth.

Step 3: Cook the French Toast

  • Heat a skillet or griddle over medium heat and melt 1 tablespoon butter. Dip each slice of bread into the egg mixture, coating both sides evenly. Cook until golden brown, about 2–3 minutes per side. Repeat with remaining bread.

Step 4: Bread the Chicken

  • Remove chicken from the marinade. Coat each piece in flour, dip briefly back into the marinade, then cover with breadcrumbs.

Step 5: Fry the Chicken

  • Heat oil in a skillet over medium-high heat. Fry the chicken for 5–7 minutes per side until crispy, golden brown, and fully cooked. Transfer to paper towels to drain excess oil.

  • Place one slice of French toast on a plate, add crispy fried chicken, then top with another slice of French toast. Drizzle generously with maple syrup and add toppings if desired.
