Ingredients
  

  • 8 thick slices brioche or challah bread
  • 1 cup ricotta cheese
  • 4 oz cream cheese softened
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
  • 4 large eggs
  • 1 cup whole milk or half-and-half
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • Pinch of salt
  • Fresh strawberries hulled and sliced
  • 1 tbsp unsalted butter

Optional Toppings:

  • Maple syrup
  • Powdered sugar
  • Whipped cream
  • Extra sliced strawberries

Instructions
 

  • In a medium bowl, mix ricotta cheese, cream cheese, vanilla extract, and powdered sugar until smooth and creamy. If needed, add a splash of milk for a softer texture.
  • Cut a pocket into the side of each bread slice using a small knife. Fill each pocket with about 2 tablespoons of creamy filling and several strawberry slices.
  • In a large bowl, whisk together eggs, milk, granulated sugar, cinnamon, vanilla extract, and salt until fully combined.
  • Heat a non-stick skillet over medium heat and melt butter.
  • Dip each stuffed bread slice into the custard mixture for 15–20 seconds per side. Avoid over-soaking.
  • Cook the Fluffy Stuffed Strawberry French Toast for 3–4 minutes on each side until golden brown and crispy.
  • Serve warm with powdered sugar, maple syrup, whipped cream, and fresh strawberries.

Notes

  • Dairy-free milk works well in the custard batter.
  • Mascarpone can replace ricotta for an even richer filling.
