Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar optional
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of fine salt
  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup plain yogurt or sour cream
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract optional

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
  • In another bowl, beat the eggs. Add the milk, yogurt, melted butter, and vanilla extract, then whisk until smooth.
  • Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing to keep the Fluffy Scrambled Pancake Bites light and tender.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  • Spoon small dollops of batter onto the skillet.
  • Cook until bubbles appear on the surface and the edges begin to set.
  • Flip and cook for another 1–2 minutes until golden brown.
  • Continue with the remaining batter and serve warm with syrup, berries, powdered sugar, or whipped cream.

Notes

  • Serve with maple syrup, honey, fresh fruit, or nut butter.
  • For a healthier twist, substitute half the flour with whole wheat flour.
