Dry Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions
 

  • In a large mixing bowl, combine the mashed bananas, milk, vanilla extract, and egg if using.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing to keep the texture light and fluffy.
  • Preheat a non-stick skillet or griddle over medium heat.
  • Lightly grease the skillet if needed.
  • Spoon small portions of batter onto the skillet to create mini pancakes.
  • Cook the fluffy banana pancake bites until bubbles appear on the surface and the edges begin to set.
  • Flip carefully and cook the other side until golden brown.
  • Serve warm with maple syrup, fresh fruit, yogurt, or nut butter.
