Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 8 ounces cremini mushrooms sliced
  • 3 cups small broccoli florets
  • 1 cup sugar snap peas
  • 1 cup thinly sliced carrots
  • 3 green onions sliced
  • Sesame seeds for garnish

Stir Fry Sauce

  • ½ cup water
  • cup low-sodium soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 garlic cloves grated
  • 2 teaspoons fresh ginger grated
  • 1 tablespoon cornstarch
  • ½ teaspoon red pepper flakes optional

Instructions
 

  • In a medium bowl, whisk together all the stir fry sauce ingredients until smooth.
  • Heat olive oil in a large skillet or wok over high heat.
  • Add bell peppers, mushrooms, broccoli, snap peas, and carrots. Stir and cook for 3–4 minutes until slightly tender.
  • Reduce heat to medium and pour in the sauce.
  • Stir continuously for 1–2 minutes until the sauce thickens and coats the vegetables.
  • Remove from heat, then top with green onions and sesame seeds.

Notes

  • Serve over rice, noodles, or quinoa for a complete meal.
  • Adjust spice level by increasing or removing red pepper flakes.
