For the Stir Fry
- 2 tablespoons canola oil
- 3 green onions thinly sliced (white/light green and dark green separated)
- 4 cloves garlic minced
- 2 tablespoons fresh ginger grated
- 4 cups mixed vegetables red bell pepper, asparagus, carrots
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 pound raw shrimp peeled and deveined
- Cooked rice quinoa, or noodles (optional)
For the Sauce
- ½ cup chicken broth vegetable broth, or water
- 1½ tablespoons soy sauce
- 2 teaspoons honey
- 1 teaspoon toasted sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon fresh lime juice
- 1 teaspoon chili garlic sauce or sriracha optional
- 1 teaspoon sesame seeds optional
In a small bowl, whisk together all sauce ingredients until the cornstarch is fully dissolved. Set aside.
Heat the oil in a large skillet or wok over medium heat.
Add the white and light green parts of the green onions, garlic, and ginger. Cook for about one minute until fragrant.
Increase heat to medium-high. Add the vegetables, salt, and pepper. Stir-fry for 3–5 minutes until slightly tender but still crisp.
Add the shrimp and cook for 2–3 minutes until almost fully pink.
Reduce heat to medium and pour in the prepared sauce. Stir continuously until the sauce thickens and evenly coats everything.
Sprinkle with the reserved green onions and sesame seeds if desired.
Serve the Easy Shrimp Stir Fry immediately over rice, quinoa, or noodles.
