Ingredients

  • 1 pound halal-certified beef or turkey kielbasa-style smoked sausage sliced into ½-inch coins
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 2 tablespoons low-sodium soy sauce
  • 1 red bell pepper chopped into bite-sized pieces
  • 1 yellow bell pepper chopped into bite-sized pieces
  • 1 cup baby carrots
  • 1 pound baby potatoes halved or quartered if large
  • 2 cups broccoli florets
  • 2 tablespoons olive oil divided
  • 2 tablespoons chopped fresh parsley or sliced green onions for garnish

Instructions

  • Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  • Slice the kielbasa into ½-inch coins. Mince the garlic, chop the bell peppers, prepare the potatoes, and cut the broccoli into bite-sized florets.
  • Add the baby potatoes and carrots to the prepared baking sheet. Drizzle with 1 tablespoon olive oil and toss well. Arrange in a single layer and roast for 10 minutes.
  • Meanwhile, whisk together the honey, garlic, low-sodium soy sauce, and remaining tablespoon of olive oil in a large bowl.
  • Add the sliced kielbasa, red and yellow bell peppers, and broccoli to the honey garlic mixture. Toss until evenly coated.
  • Remove the baking sheet from the oven. Add the coated kielbasa and vegetables to the partially roasted potatoes and carrots. Toss gently and arrange everything in an even layer.
  • Return the Easy One Pan Honey Garlic Kielbasa and Veggies to the oven and roast for 20–25 minutes, stirring halfway through. Cook until the potatoes and carrots are fork-tender, the vegetables are roasted, and the kielbasa is browned around the edges.
  • Let the sheet pan dinner rest for about 2 minutes before garnishing with fresh parsley or sliced green onions. Serve warm.

Notes

For a lighter serving option, enjoy this honey garlic sausage and vegetables dish as-is without additional sides. For a heartier meal, pair it with steamed rice, brown rice, quinoa, or a simple green salad.
Turkey kielbasa can be used instead of beef kielbasa. You can also adjust the vegetable combination depending on the season.
If you prefer more sauce, make an additional small batch of the honey, garlic, and soy mixture separately. Bring it to a simmer in a small saucepan before serving it over the finished meal
