Easy Lasagna Soup: A Cozy One Pot Family Dinner

Easy Lasagna Soup is a one-pot meal with beef, lasagna noodles, tomato broth, herbs, and cheese.
It takes about 50 minutes from start to finish.
Serve hot with ricotta, mozzarella, Parmesan, and fresh basil.

Ingredients
  

  • 1/2 pound lean ground beef
  • 1/2 pound halal beef sausage
  • Salt and freshly ground black pepper to taste
  • 1 yellow onion chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 24 ounces marinara sauce
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 7 cups low-sodium halal chicken broth or vegetable broth
  • 9 lasagna noodles broken into pieces
  • 2 cups fresh spinach leaves optional
  • 10 ounces ricotta cheese or cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil for serving

Instructions
 

  • Place a large pot over medium-high heat. Add the ground beef and halal beef sausage and cook until browned, breaking the meat into small pieces as it cooks. Season with salt and black pepper. Drain excess fat and transfer the cooked meat to a plate.
  • Add the olive oil to the same pot and reduce the heat to medium. Add the chopped onion and sauté for about 5 minutes, or until softened.
  • Add the minced garlic and cook for 1 minute, stirring frequently so it does not burn.
  • Stir in the tomato paste and cook for about 1 minute. Add the marinara sauce, red pepper flakes, parsley, oregano, dried basil, and broth.
  • Return the cooked meat to the pot and stir everything together. Bring the soup to a gentle boil.
  • Break the lasagna noodles into bite-sized pieces and add them to the pot. Reduce the heat to medium-low and simmer, stirring occasionally, until the pasta is tender according to the package directions.
  • Stir in the spinach, if using, during the final 2–3 minutes of cooking.
  • Meanwhile, combine the ricotta, mozzarella, and Parmesan in a small bowl.
  • Taste the Easy Lasagna Soup and adjust the salt and black pepper as needed.
  • Ladle the hot soup into bowls and top each serving with a generous spoonful of the cheese mixture. Finish with fresh basil and serve warm.

Notes

For an even easier soup recipe, use your favorite good-quality prepared marinara sauce. Make sure the beef sausage, chicken broth, cheeses, and other packaged ingredients you select meet your halal requirements.
Serve the soup with garlic bread, warm crusty bread, or a simple green salad. For extra richness, sprinkle additional mozzarella or Parmesan over each bowl just before serving.
If you plan to make the soup ahead, consider cooking and storing the lasagna noodles separately. This prevents them from absorbing too much broth while refrigerated.
