Easy Green Summer Chopped Salad

Fresh chopped salad with romaine, chickpeas, cucumber, herbs, and feta cheese.
Tossed in a simple lemon oregano dressing.

Ingredients
  

For the Salad

  • 1 head romaine lettuce chopped (about 4–5 cups)
  • 1 14–15 oz can chickpeas, rinsed and drained
  • 1 cup chopped cucumber
  • 1/3 cup chopped fresh herbs dill, mint, basil, or a combination
  • 1 cup chopped radishes
  • 1 cup crumbled feta cheese
  • 1 1/2 cups crushed pita chips or croutons

For the Dressing

  • 5 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a small jar or bowl, combine the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
  • Shake or whisk until the dressing is fully combined.
  • Wash and chop the romaine lettuce.
  • Chop the cucumber and radishes into bite-sized pieces.
  • Finely chop the fresh herbs.
  • Rinse and drain the chickpeas thoroughly.
  • Add the lettuce, chickpeas, cucumber, herbs, radishes, and feta cheese to a large serving bowl.
  • Drizzle the dressing over the salad.
  • Toss gently until everything is evenly coated.
  • Top with crushed pita chips or croutons just before serving.

Notes

  • Replace chickpeas with grilled chicken, turkey, tofu, or another preferred protein.
  • Add avocado for extra creaminess.
  • Include cherry tomatoes for additional color and sweetness.

  • For a dairy-free version, omit the feta cheese.
