Ingredients

  • 12½ ounces fresh strawberries ¾ pound, cleaned and sliced
  • ½ cup granulated sugar
  • 1 cup cold heavy whipping cream at least 30% fat
  • Extra fresh strawberries sliced, for garnish

Instructions

  • Wash, hull, and slice the strawberries.
  • Add the strawberries and sugar to a blender or food processor. Blend until completely smooth.
  • Measure out ½ cup of the strawberry puree and set it aside.
  • In a chilled mixing bowl, whip the cold heavy cream until stiff peaks form.
  • Gently fold the remaining strawberry puree into the whipped cream until fully combined. Avoid overmixing to keep the mousse light and fluffy. This Easy Fresh Strawberry Mousse should remain airy and smooth.
  • Divide the reserved strawberry puree evenly among four serving glasses.
  • Spoon or pipe the strawberry mousse over the puree layer.
  • Refrigerate for at least 1 hour, or overnight for the best texture.
  • Garnish with fresh sliced strawberries before serving.

Notes

  • Frozen strawberries may be used if thawed and well drained.
  • Replace part of the strawberries with raspberries for a mixed berry version.
  • Serve with whipped cream, fresh mint, chocolate shavings, or crushed cookies.
  • This creamy strawberry mousse also makes a delicious filling for cakes or parfaits.
