In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
Stir in the diced green bell pepper.
Melt 2 tablespoons of butter in a large skillet over medium heat.
Pour in the egg mixture and cook, stirring frequently, until the eggs are fully set but still soft. Transfer the scrambled eggs to a plate.
Wipe the skillet clean if needed, then melt the remaining 2 tablespoons of butter over medium heat.
Place one tortilla into the skillet.
Sprinkle about ¼ cup of cheddar cheese over the tortilla, leaving a small border around the edge.
Evenly spread a portion of the scrambled eggs over the cheese.
Top with chopped turkey ham and a little extra cheddar cheese.
Place a second tortilla on top and gently press down.
Cook the Easy Breakfast Quesadillas for 2–3 minutes per side until both tortillas are golden brown and the cheese has melted.
Repeat with the remaining ingredients.
Slice into wedges and serve immediately.
