Easy Breakfast Quesadillas

Easy Breakfast Quesadillas are filled with fluffy eggs, turkey ham, cheddar cheese, and bell peppers inside crispy tortillas.

Ingredients
  

  • 6 large eggs
  • ¼ cup milk any variety
  • Salt and black pepper to taste
  • ½ green bell pepper diced
  • 4 tablespoons unsalted butter divided
  • 6 slices turkey ham cooked and roughly chopped
  • ¾ cup shredded cheddar cheese divided
  • 6 medium flour tortillas

Instructions
 

  • In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
  • Stir in the diced green bell pepper.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Pour in the egg mixture and cook, stirring frequently, until the eggs are fully set but still soft. Transfer the scrambled eggs to a plate.
  • Wipe the skillet clean if needed, then melt the remaining 2 tablespoons of butter over medium heat.
  • Place one tortilla into the skillet.
  • Sprinkle about ¼ cup of cheddar cheese over the tortilla, leaving a small border around the edge.
  • Evenly spread a portion of the scrambled eggs over the cheese.
  • Top with chopped turkey ham and a little extra cheddar cheese.
  • Place a second tortilla on top and gently press down.
  • Cook the Easy Breakfast Quesadillas for 2–3 minutes per side until both tortillas are golden brown and the cheese has melted.
  • Repeat with the remaining ingredients.
  • Slice into wedges and serve immediately.

Notes

  • Monterey Jack, mozzarella, or Pepper Jack cheese are delicious substitutes for cheddar.
  • Whole wheat tortillas can be used for added fiber.
  • Add cooked breakfast beef sausage or sautéed vegetables for extra protein and flavor.
  • Serve with pico de gallo, guacamole, or hot sauce.
